General Tso & sweeteners

Hi friends!
I've been working on some new meals, and since I'm missing Asian food, I did some experimenting a few weeks ago. I thought I'd share this General Tso recipe I adapted from ibreatheimhungry.com, and also ask what ways you all like to sweeten things that need some sweet in ways that don't trip you. The dates in here seem to work well for me.

Sorta General Tso Sauce
1 tsp toasted sesame seeds
3T unseasoned rice vinegar
2tsp vinegar
3T soy sauce
1/4 cup water
6 dates
1/2 tsp xanthan gum (optional)
Chili Garlic sauce (Huy Fong) to taste
Top with 1/4 c chopped green onions

I like to cook chicken in a bunch of the sauce and stir fry a bunch of veggies (tonight zucchini, onion, red bell pepper, mushrooms, carrots) on the side with just a little sauce, and serve all over brown rice. (Or red cargo rice, if I could find it anywhere!)

What do you like to use to replace sweeteners in recipes that you're adapting?
