Carbohydrate Sensitivity

Does anyone over react not to just sugar and refined carbs but to all grains?
I had originally quit this program as it was not helping my extreme insomnia, but after seeing an endocrinologist and monitoring my blood sugar, it seems I have volatile blood sugar after any grains...and its got to the point I now have low insulin levels As a vegetarian, I am finding this very difficult.

Can anyone relate to this? Any helpful tips on what to eat? (I wont eat meat)
