: Saturday was not the best day. We
: went out to lunch, and the
: restaurant was very busy, so by
: the time we got served my blood
: sugar was pretty low. Also, I was
: feeling a bit low. I knew it was
: low beta endorphin, so I just
: carried on, knowing the feelings
: would pass. Anyway, that afternoon
: my husband went to the grocery
: store to pick up a couple of
: things. He had been talking about
: making green chile chicken
: enchilada casserole. He uses cream
: of mushroom soup in the sauce. I
: had asked him to get Amy's instead
: of Campbell's because I am working
: on not eating any gluten. He came
: home with Campbell's and I asked
: him about it. He said Amy's had
: too much sodium for him. I told
: him I didn't want to eat gluten.
: Then he started giving me a hard
: time about how a little gluten
: wouldn't hurt me. Because my Beta
: endorphin was low, I proceeded to
: brood about it.

: Fast forward to Sunday. After a nice
: morning of bird watching and a
: good lunch, we went to a different
: grocery store to buy some things
: they hadn't had at the other one,
: and we decided to look into the
: cream of mushroom soup issue. As
: we read the labels on various
: different brands, it became clear
: that all of them had wheat and a
: lot of sodium. This time, I was
: able to come up with a plan
: instead of getting upset. I
: suggested that we look at recipes
: for cream of mushroom soup and
: then make some kind of thick
: mushroom sauce of our own to use
: in casseroles. We could make a
: bechamel sauce and use oat flour
: instead of wheat flour. That way,
: there would be no gluten and we
: could also have control over the
: amount of sodium. DH got excited
: about this idea. So instead of us
: getting into a power struggle over
: whether I was going to eat gluten
: in the casserole, we came up with
: a solution that works better for
: both of us. On Saturday there was
: no way I would have come up with
: that solution. Life works so much
: better when biochemistry is in
: balance.
