hello! and it's nice to see you.
I make sweet potato muffins which are delicious and popular even with non SS people (and are great to eat for sports too).
2-3 mashed baked sweet potatoes (no skins)
1/3 cup oil
2 eggs
1 3/4 cup oat flour
1 t salt
2 t baking powder
walnuts
almond milk enough to make batter creamy like cake batter
optional: unsweetened carob or chocolate chips
Bake in muffin tins at 350 until done--15-20 minutes usually.
