Charity's Marinade


Ingredients:

  • olive oil
  • soy sauce (organic no sugar)
  • fresh squeezed lime juice
  • fresh grated ginger
  • chopped or pressed fresh garlic
Directions:

Let chicken or salmon marinate for about 1 hour before cooking or grilling.

Onion Sauce


Ingredients:

  • 2 tbsp extra virgin olive oil
  • 1 medium white onion, thinly sliced (1 cup packed)
  • 1/4 tsp ground thyme
  • 1 cup water
  • 4 tsp powdered vegetable broth or miso, or 1 vegetable
  • bouillon cube
  • 2 tbsp flax or Udo's Choice oil
Directions:

Heat the olive oil in a skillet. add the onion and thyme. Saute, stirring for 3 to 4 minutes, until the onion begins to brown. Add the water and powdered vegetable broth, miso, or bouillon cube. bring to a boil and simmer 3 to 4 minutes over high heat.

Puree in a blender or food processor. Add the flax oil and blend briefly to combine.

Makes 1-1/2 cups

Oven-Baked Chicken Coating


Ingredients:

  • 1 cup almond flour
  • 1 cup cornmeal
  • 4 tsp ground cumin
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp dried oregano
  • 1 tsp salt, optional
  • 1 tsp cayenne pepper
Directions:

Mix all ingredients in a large resealable plastic bag. Store in a cool, dry place for up to 6 months.

Yield: 3 batches (2-1/4 cups total)

Preheat oven to 375 degrees fahrenheit.

To prepare chicken: place 3/4 cup coating mix in a resealable plastic bag. Dip chicken (one 3 lb. broiler/fryer - cut up, skin removed) in melted butter (3 tbsp); add chicken to bag a few pieces at a time, and shake to coat. Place in a greased 15-in. x 10-in. x 1-in. baking pan. Bake, uncovered, for 45-50 minutes or until juices run clear.

Yield: 4 servings per batch. Diabetic exchanges: 4 lean meat, 1 starch.

Chinese BBQ Marinade


Ingredients:

  • 1/2 cup soy sauce (I use tamari)
  • 1 tbs canola oil
  • 1 1/2 tsp dry mustard
  • 1 tsp dry ginger or 2 tsp chopped fresh ginger
  • 1/4 tsp pepper
  • 2 cloves garlic, minced
Directions:

Mix all ingredients well. Marinate chicken for several hours or overnight.

This recipe is for chicken, but I think that you could also use it to marinate salmon. I would just add some lemon juice to it.

Lemon Marinade


Ingredients:

  • 1/2 cup fresh lemon juice
  • 1 tbs canola oil
  • 1 1/2 tbs Dijon mustard
  • 1 tbs soy sauce (I use tamari)
  • 1/4 tsp cayenne pepper
  • 1 clove garlic, minced
Directions:

Mix all ingredients. Pour over chicken and marinate for several hours or overnight.

Flank Steak Marinade


Ingredients:

  • 1/2 cup tamari
  • 1/2 cup water
  • 1/2 c vinegar (wine, balsamic, whatever)
  • 1/4 c lemon juice
  • 1 tsp parsley flakes
  • 1 Tbsp dry mustard
  • 1 tsp salt (optional)
  • 1 tsp pepper
  • 1 clove garlic
Directions:

Blend 30 seconds. Refrigerate

Garlic Sauce


Ingredients:

  • 2 T sesame oil
  • 11/2 T vegetable oil
  • 3/4 tsp crushed red pepper
  • 1 1/2 T minced garlic
  • 1/4 c tamari or soy sauce
  • 1 T lemon juice
Directions:

Heat oils in a saucepan until very hot but not smoking. Add red pepper. Cover and let stand 10 minutes or so. Add garlic, tamari, and lemon juice. Stir.

Serve over vegetables.

I usually lightly steam the veggies, then run under cool water to stop the cooking so they stay crunchy and then pour the sauce over.

Curry Sauce for Asparagus


Ingredients:

  • 1/2 cup mayonnaise
  • 2-3 tsp. curry powder
  • /2 Tbsp. lemon juice
Directions:

Mix it up, chill it, and pour it on steamed asparagus.

Peanut Sauce


Ingredients:

  • *1/4 cup poultry stock
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce (I used shoyu)
  • dash of cayenne pepper
  • 1 tsp minced garlic
Directions:

In a small saucepan, heat stock. Add remaining ingredients and mix well. Store in a tightly covered jar in refrigerator.

Yields about 2/3 cup.

*NOTE: the only poultry stock that I had was in the freezer, and it was a lot more than 1/4 cup. So, since I keep Knorr bouillon cubes (usually beef, tomato, fish and chicken as a staple in my cupboard, I dissolved one in 2 cups boiling water. then I added the 1/4 cup of it and the rest of the ingredients to the sauce pan and went from there.

Serve over hot cooked grains or use as a dip for crisp raw veggies.

Quick Peanut Sauce


Ingredients and Directions:

My daughter loves this combo. (So do I!)

What she does is put the jar of peanut butter in the microwave and warms it enough to be pourable or spoonable.

She tops her food with the peanut butter, and adds garlic powder and either crushed or ground cayenne pepper. Also green onions, sliced thin.

Ingredients and Directions:

Ingredients: soy sauce, rice wine vinegar, toasted sesame oil, grated fresh ginger, crushed garlic, chopped scallion, honey (optional, if you're still eating it and can tolerate it). Mix together in whatever proportions you like.
