Cranberry Chutney


Ingredients and Directions:

Cut up 4 Valencia oranges, add the rind of one of them simmer in 4 cups apple juice for 15 minutes.

Add 2 lbs fresh cranberries and 1 1/2 cup of walnuts.

Simmer for 15 minutes until it thickens.

Add 1 tsp cinnamon and a pinch of nutmeg.

It actually is delicious. It may seem like a lot of apple juice, but remember this is for a full quart of chutney and one serving is maybe, hmm 2 TBS.

Barlean Butter


A spreadable alternative to margarine with half the saturated fat of butter. Use on toast, bagels, or muffins.

Ingredients:

  • 1 stick of butter
  • 4 ounces Barlean's Organic Flax Oil
Directions:

Cut the butter into cubes and gently melt in a small saucepan.

Pour the liquefied butter into a small, sealable container.

Stir in the flax oil. Seal and set in the refrigerator to solidify.

Mayonnaise


Ingredients:

  • 2 egg yolks, at room temp, lightly beaten
  • 2 tbsp lemon juice or vinegar, at room temp. (I used lemon juice concentrate)
  • 1/2 tsp dry mustard
  • 1-1/2 cups vegetable oil (I used 1-1/4 cup canola and 1/4 cup sesame)
  • 2 tsp boiling water
Directions:

If you choose to blend by hand here are the instructions for that. My food processor instructions will follow them:

Warm a glass or stainless steel bowl and a wire whisk in hot water. Dry thoroughly. Place egg yolks in the bowl and add 1 tbsp lemon juice and the mustard. Beat well.

Continue beating constantly as you add the oil, 1 drop at a time. Be sure the yolks are absorbing the oil. This may require that you stop adding the oil and just beat the yolks for a few seconds.

After about 1/3 cup oil has been incorporated into the yolks, add remaining oil by the tbsp. beat well after each addition.

When mayo is thick and stiff, beat in remaining lemon juice to thin. To prevent mayo from separating, blend in the boiling water.

Store in a covered glass jar in the refrigerator.

My food processor steps:

Add egg yolks, 1 tbsp lemon juice and dry mustard to processor bowl. Process on low until blended.

Begin adding oil through top of processor a tiny bit at a time. Processing n low with each addition. After about 1/3 cup of oil has been added, begin adding the rest of the oil in a steady stream.

Continue processing until all oil has been added. When mayo is thick and stiff, beat in remaining lemon juice to thin. To prevent mayo from separating, blend in the boiling water.

Store in a covered glass jar in the refrigerator.

Yields about 1-1/4 cups.

Oatmilk


Ingredients:

  • 1 cup of oat groats
  • 5 cups of water
Directions:

Bring to a boil, then AS SOON AS IT STARTS BOILING, turn down to a simmer, and simmer for an hour. Take it off the stove immediately and pour through a sieve. Sometimes I eat the cooked groats for my evening carb, but not usually. (I haven't figured out yet how not to waste the cooked groats ...)

I usually double the recipe, and it makes a week's worth of oat milk for me.

Cajun Blackening Powder


There are many versions of Cajun Spice. This recipe is a nice basic version

Ingredients:

  • 2 Tablespoon Sweet Paprika
  • 2 teaspoons Salt, (more or less to taste)
  • 2 teaspoons Onion Powder
  • 2-3 teaspoons Cayenne Pepper
  • 3 teaspoon Black Pepper
  • 1 teaspoon Thyme Leaves
  • 1 teaspoon Dried Oregano
Directions:

In a small bowl or jar, mix all the spices. Store remaining in an airtight jar and store in a cool, dark place.

BBQ Spice Rub


Ingredients:

In a pint fruit jar I put:

  • 3 TBS dry mustard
  • 3 TBS chili powder
  • 4 tsp cayenne pepper
  • 3 TBS paprika
  • 3 TBS garlic powder
  • 3 TBS onion powder
  • 4 tsp lemon pepper
  • 2 tsp ground cinnamon
  • 1 tsp ground allspice
Directions:

The 4 tsp of cayenne creates a lot of heat so if you like a milder BBQ sauce, you might want to decrease this spice. I think it would work great for chicken wings as is, maybe with a bit more cayenne if you really like the fire.

To use the rub in cooking I lightly coated the meat and roasted or grilled it. When I roasted the chops, I had meat drippings in the pan. I added a small can of tomato sauce to these drippings and had a great sauce to baste the meat. You could probably add the spice mixture to a can of tomato sauce and use it just like you would the bottled BBQ sauce.

Another variation I've thought of is to add apple juice or pineapple juice to make the sauce a little sweeter. My friend also suggested a little cider vinegar to make it a little more tart.

Better Butter


Ingredients:

  • 1 c. Canola Oil
  • 1 c. (1/2 pound) butter
  • 2 TBS water
  • 2 TBS powdered nonfat milk
  • 1/4 TSP lecithin (found at whole food stores)
Directions:

Whip together in a blender. Store in airtight container in your fridge.

Canola Butter or Olive Butter


Ingredients:

  • 1/2 cup butter brought to room temperature
  • 1/2 cup canola oil or 1/2 cup olive oil
Directions:

Place butter and oil into a blender or food processor. Blend until thoroughly combined. (The spread will be the consistency of yogurt or thick cream). Spoon into a cup, bowl, or mold; cover and place in the refrigerator to firm. They claim it's the perfect consistency for spreading right from the refrigerator, but if left at room temperature for an hour or more, they'll become almost liquid
