I hope you all had a peaceful and grateful Thanksgiving this year. With each year, I feel more connected to the idea of the thanks part. That is lovely. And it was fun to be talking with our friends outside the states about what the holiday means.

I love this quieting, quieting. I have been listening to the Messiah while cleaning my kitchen today. I sprayed the counters with the counter stuff that has such a clean, clean smell. So the kitchen has a faint scent of citrus. The living room on the other hand smells like Christmas cookies, LOL. I went to Cracker Barrel for a birthday breakfast and they have Yankee candles. They only have Christmas Cookie this time of year. Of course the dogs are seeking, seeking cookies.

Handling the Holidays: Christmas is our annual discussion of how to transform eggnog and green tree sugar cookies. This will be about families and expectations and food is love and all those sorts of things that come up for many of us this time of year.

Step 3: Three Meals is one of our core classes. This is a skilled based class. If you want to learn the baby steps of a successful step 3, come join us. This class is ALWAYS fun.

Resource Center Tour is another one of our free walking tours through the website. This one takes you through the resource center. Explore all the nooks and crannies and discover things you did not know were there.

Brain Chemistry: Beta Endorphin is one of our most popular classes. It will teach you the core of the science behind the program. This is the outline for a critical part of sugar sensitivity, why you act the way you do and what you can do to change it. I love this class and so do all the people who have taken it. Somehow BE rocks!

Step 1: The Art of Breakfast is our foundation class to get you started. Learn all four parts of step 1 in a structured way. Learn how to progress through them with enjoyment. Let us support getting your program off to a fabulous start.

Radiant Store Tour is a free guided tour of the store. David will be leading this class so if you want to get to know the guy that makes it all work, come sign up. This is his first teaching experience, so you can show your support for the work he does to keep you happy.

A number of you have asked me how the classes work. Check the class list page for more information on this. The classes are done online and you do not have to be at your computer at any set time. It does not matter whether you are in the US, Europe, the Far East or Australia, you simply respond on your own time. And although I advertise that the classes are one or two weeks, sometimes we are a little flexible and they may run longer.

And please go read the questions and answers before you write to me. If you have trouble getting through the process, write the tech forum.

I had a bad case of the Flat on step 3. It was pretty disappointing and I felt bored doing the food. I asked on the list just like you do now and was told it would pass. I decided to be patient and just do the food the best I could, and of course they were right. It passed and I felt much better after a while. I was a bit suprised when the flat came again on step 6, but it really does make sense. These are the steps where we lessen the impact of sugar - first by moving it to meals and then by taking it out - and the lack of BE hits can make us feel bored and flat. When the body adjusts, you come back to life again - so much better than before! So hang in there!

**Radiant Kitchen**

Thanksgiving is over and you have some leftover turkey. Here are some ideas on what to do with it.

LEFTOVER TURKEY & STUFFING CASSEROLE

Mix cubed cooked turkey with the leftover stuffing together. Add about 1/4 cup leftover gravy and mix well. Place in a large casserole dish and bake at 350 degrees for about half an hour or until heated through.

LEFTOVER TURKEY & WILD RICE

  • 1/4 cup olive oil
  • 1/4 cup whole wheat or whole spelt or brown rice flour
  • 1 cup hot chicken broth
  • 1/2 teaspoon salt
  • dash pepper
  • 1 cup soy milk
  • 12-16 sliced turkey leftover turkey - room temperature
  • 2-3 cups cooked wild rice (or brown rice noodles)
  • 2 tablespoons chopped toasted almonds
Heat oil in a saucepan over low heat, add flour and stir until smooth. Pour hot chicken broth into the flour mixture and stir until smooth. Add salt and pepper. Heat soy milk in a separate saucepan or in microwave, then add to the thickened sauce. Cook over low heat for 10 minutes, stirring constantly. Serve sauce hot over sliced turkey breast and wild rice (or brown rice noodles). Sprinkle with toasted chopped almonds if desired.

Loving the fact that I have my kids extra days because their dad is out of town and not being mad at their dad for not spending more time with them.

Sitting in a business computing class tonight being taught something WAY over my head. And the woman who was next to me did something totally off the planet wrong and looked over at me. Walking on the beach with children playing, seagulls scampering about, and waves crashing against the rocks, reminding me that there really is a 'bigger picture'.

Being out on the ocean waves on my surfboard feeling the strength and smoothness of the 'ride', and realizing that it's all for fun.

Indescribable,
A place of serenity and peace in the midst of storms,
