Hi Joy,
collards are great, feel very substantial. chuckling at getting them tender . I usually cut into ribbons, steam plain & store in the fridge for shake. Cooking them for eating is an all afternoon affair! Try raw mustard greens, they have a nice, mild peppery bite to them.
