As for your Yahoo ID showing up, I don't know any way to change that, other than getting a new Yahoo ID and signing up for the lists under the new one.

However for your email showing up on the lists - good news on that one. The reason it shows up for you and no one else's does, is because you are logged in as you. When anyone else looks at the members on the list, their own email address shows up for them but to no one else. In other words, you are the only one who sees your email address - no one else sees it.
