I use raw oats in my shake, but if I am eating oats any other way, I cook them first. (I've never tried the overnight oatmeal, but that would probably work too.)
The only time I've ever eaten raw oats other than in shake is when I was a child and I was pretending to be a horse. They were pretty bland and dry - I guess it's a good thing I'm not a horse!
I don't always like the texture of cooked oats, but steel cut oats are nice. They take longer to cook but aren't so gloopy. There's also a brand called Coach's oats where the oats are toasted. They cook fairly quickly but have a texture a bit more like steel cut oats.
