I love that you are making observations and learning what works for your body.
I think you will find that eating meat and fish will really help. Protein is really key for me - if I don't have enough protein, I will feel it pretty quickly. Much as I'd love not to eat animals, my body really feels much better when I eat animal protein, especially meat.
