Pot luck

At work, we have monthly potluck lunches. They can be a bit of a challenge sometimes. We have a sign up sheet so I try to figure out what people are bringing and what will be an option for me and plan around that. This time, a lot of people didn't write anything on the sign up sheet, and the only main dish that someone had put down was pizza, which I knew wasn't going to work for me. So I decided to bring chicken. I bought 2 rotisserie chickens at Costco and shredded the meat. In addition to the chicken, there was salad, a veggie tray, fruit, tortilla chips and guacamole, and potato salad (and it even had skins).

I combined the salad greens, chicken, and veggies from the veggie tray to make a salad. For browns, I had tortilla chips and potato salad, which was not ideal, but was ok.

I had also brought some back up food, such as celery and carrots and some brown rice. I figured that if the food people brought didn't work for me, I would eat what I could and then supplement with my own food. I did find workable options, and I was too full to eat the back up food, but I have it in the fridge at work so I won't have to bring as much food tomorrow because I have a variety of foods here.

There was chicken left over, so I will bring it home and we can make enchilada casserole or some other dish with it. I am also bringing home what was left of the chickens after I took the meat off so we can make broth and give our dogs a few treats as well (skin and bits of meat, no bones.)
