Re: 21 days completed with vegetable additions

Ratatouille is a wonderful veggie dish
Some of our standby veggie dishes:
Lightly steamed zucchini and summer squash, sauteed with olive oil and a splash of balsamic vinegar (sauteed onion and mushroom are good additions to this, also freshly grated parmesan cheese)

Steamed green beans, sauteed with mushrooms, olive oil and Penzey's Sunny Paris seasoning

Steamed Cauliflower sauteed in olive oil with Penzey's Singapore seasoning (or curry powder)

Last night I steamed some asparagus, sauteed chopped mushrooms and added the asparagus, with some tamari, ginger and a splash of toasted sesame oil. I added some chopped rotisserie chicken.

I also like to add mushrooms and steamed zucchini to my spaghetti sauce
