incredibly good observation which you may be able to incorporate later on, depending how you feel about it, maybe the compromise of ethically sources chicken will help
we only do non meat Mondays, but have great success with red lentil mushroom wholewheat burgers that also do well in a falafel sort of shape ....... oh and there you go, falafel
Any sort of chickpea thing, stew, tagine. chickpea = garbanzo. Looking up sites for this sort of cookery is inspiring. Google Manjulas kitchen, she is my favourite.So many flavourful indian spice things
if you could tolerate cheese, halloumi is amazing
