Debbie I have been gluten free a long time as it suits me well, but the good news is that a lot of ordinary food is gluten free so you don't have to go to a ton of expense buying specialist things

old favourites: sweet potato, any sort of potato- mashed, boulangere, rosti, wedges, new, roast in olive oil and rosemary, quinoa ( actually that didn't suit me too well, but its a good one :h6) ) whole wheat cous cous if you can get it.

hummous, white beans mashed, red kidney beans in chilli, three bean salad, refried beans, might have to layer these up a bit or 'stack' as we say. refried beans come in a tiny tin here so was handy for travel emergencies

gram flour is great too, chick pea flour/garbanzo. Google manjulas Kitchen and she has a video of how to make besan puda. Chickpea wrap. So versatile. Socca as well, or Yorkshire pudding.
