Here are a couple of easy things to do with vegetables.

Steam zucchini and summer squash, then saute with mushrooms and add a little balsamic vinegar

Steam green beans, then saute with mushrooms. I like to add a wonderful seasoning from Penzey's called Sunny Paris

Steam cauliflower and saute and add some curry powder (or Penzey's Singapore, which is curry with lemon)

Roast or cook veggies in a foil packet on the grill. chop veggies, toss with oil and seasoning, and bake on a baking sheet in the oven or seal in a foil packet and cook on the grill. I like to season with oil and balsamic vinegar before cooking.

And of course, stir fry is always good. Season with soy sauce and ginger and garlic.

I can't answer the brown bread question because I'm the other Allison, with two Ls, and I've never made it.
