Re: Summer vegetables

LOL, I had okra last night (but not in a mold) and I spilled some on the floor. It took several tries to get it properly cleaned up. I know they are an acquired taste.

If you like to cook on the grill, you can chop veggies, add some oil and spices or herbs (or sprinkle with Italian dressing) and seal them in a foil packet to cook on the grill. We use 2 sheets of foil under the veggies and spray with non-stick spray. Then we top with 2 more sheets of foil and start folding the edges in to make a packet, folding in from all sides. The packet will puff up on the grill and the veggies will steam inside. You can put potatoes or sweet potato in there too. We like to combine chopped potato, onion, carrot and radishes with chili powder, but we've also combined potatoes with other vegetables. You can do this in your oven, but we like to keep oven use to a minimum in hot weather. You can also roast veggies on a baking sheet in the oven. Seasonings would be similar. I often do potatoes this way. I like them roasted in the oven because they get crispy on the outside.
