I'm interested in hearing how people here make meatloaf.

I myself add grated potatoes (with skin), chopped onion, celery, mushrooms (sometimes I sautee the mushrooms and onions and then add to the meatloaf).

Instead of bread crumbs I use oats (instant or rolled).
I kinda feel the mushiness of the oats, but keep using them because they're a good brown.

Any other ideas?
