Im not at all traditional Sarit, so my American friends would probably be horrified :h6)

I buy a gluten free sausage from Sainsburys, its their taste the difference range

and mix that with either lamb or beef mince ( deskinned of course). I like tomato puree in it too. It makes a great binder and texture, that combination of tomato and sausage together

sometimes I will add well cooked mushrooms and onions like you do

I used to use oats but I like this texture better. It sometimes is meatloaf and I like more tomato puree on top to bake it, but it usually morphs in to meatballs in tomato sauce, in which case I adore some cinnamon in the meat...………. or I like it sliced in pitta with a lot of salad and garlic yogurt sauce or tzatziki
