Black beans are a great idea for a meatloaf filler, Allison!
I'm going to try that, but I'll put them in the blender first for family members who don't want to see beans in the meatloaf, ha ha.
: Here's a meatloaf I like to make.
: It's sort of Mexican flavored, so
: I'm not sure all these ingredients
: are available where you live.
: 2 lb ground chicken or turkey (I
: suppose you could use any ground
: meat, but this is what I've always
: used.
: 1/3 cup mayonnaise (I just put in a
: glob, this is an estimate)
: 1/3 cup salsa, whatever level of
: spiciness you like (same as above)
: 1 packet taco seasoning
: 1 onion, chopped into small pieces
: 1 15 oz can black beans, rinsed and
: drained
: Put all the ingredients in a big bowl
: and combine well. I find the best
: way is just to stick my hands in
: and squish it all together until
: it's well mixed. Place the mixture
: in two loaf pans and bake at 350
: for about an hour or until a knife
: comes out clean.
: Makes 8 servings.
