When I was just cooking for one, I had a turkey chili and a chicken chili recipe that I used to make frequently. I would eat one serving and freeze the others. I don't freeze much now because there are two of us and so a recipe for 4 servings makes dinner and lunch the next day. I can dig out the recipes if you are interested. They are easy and tasty.
We eat a lot of grilled meat now, and before a trip we usually grill up a bunch of pork chops or chicken thighs to freeze and take along - it doesn't take any longer to grill lots of meat than it does to grill a meal's worth.

: boiled some eggs for quick snacks,

: veggies like a prewashed salad
: mix, and some steam in the bag
: frozen veggie mixes.

: very cared for by myself. I'm
