That's a wonderful step when we prepare ahead to take good care of ourselves, rather than wait until we're falling off the cliff starving and try to cook then.
I cook a pot of steel cut oats ahead of time so my shakes always have chilled oats ready. I cook hard boiled eggs for my husband's lunches and sweet potatoes for all kinds of things.
It's going to be hot this week, so this morning I made a spinach/broccoli egg pie. I'm going to make some tuna cakes, which freeze well (can of tuna, egg, mayo, mustard,
quick oats, Mrs. Dash Italian spice, salt and pepper, sauté until cooked). Veggie burgers with eggs are one of my staple meals too.
Nice to hear you're taking good care of yourself.

: I've recently been experimenting with
: doing a bulk cook over the
: weekend. I've started classes that
: are requiring a lot more of my
: time, and I want to make sure I
: don't fall into preparing
: half-hearted meals in a rush or
: late because of my new schedule. I
: like feeling good and don't want
: to give that up
: So this past weekend I cooked several
: servings each of taco fixings,
: black beans, brown rice, pasta and
: meaty marinara, turkey burgers
: with onions and green bell peppers
: added, and a heap of baked sweet
: potatoes (I tried some purple
: ones! They are tasty!). I put the
: turkey burgers in the freezer to
: pull out later in the week. Plus I
: boiled some eggs for quick snacks,
: and bought some quick and easy
: veggies like a prewashed salad
: mix, and some steam in the bag
: frozen veggie mixes.
: Meals during the week are coming
: together so easy, and I'm feeling
: very cared for by myself. I'm
: trying to decide if it's actually
: more efficient to do my cooking
: this way, since I'm multitasking
: preparing the meals all at the
: same time... anyways this is my
: current experiment.
: Anyone done this type of bulk weekend
: cooking before and have tips? Or
: meal suggestions that work well
: for cooking ahead and freezing?
: I'd love to hear.
