I can't find my chicken chili recipe. I will keep looking when I get a chance. IN the meantime, here's the turkey chili recipe
1 onion, diced
1 clove minced garlic
1 lb ground meat, I generally use turkey or bison
2 cans beans, drained, I use black beans or kidney beans or one of each
3 15 oz cans diced tomatoes with jalapeno, or you can mix plain diced tomatoes with rotel diced tomato with chili (If you live in New Mexico, you use plain diced tomatoes and add chopped green chile)
Salt to taste
1 tablespoon chili powder
Brown meat and add onions and garlic. (Add a little oil if you are using a ground meat that doesn't contain much fat.) Cook until onions are soft. If using higher fat meat, drain off the excess fat after the onions are cooked.
Add drained, rinsed beans, diced tomatoes and chili powder. Stir well to combine and simmer for about 15-20 minutes.
If my husband adds too much green chile to this, I will add some Greek yogurt to my serving. If you are using the diced tomatoes with jalapeno, it's not super spicy Rotel is a bit hotter.
