I love this salad dressing and thought would share. The amazing alchemy means solid coconut oil stays runny. ( as long as you keep it on the table not the fridge … ) I find that fascinating !

melt 2 tablespoons coconut oil in a shaker jar

add 2 tablespoons olive oil ( I like the lighter one in this )

add teaspoon Dijon mustard

pinch to your liking ( big pinch for me ) Maldon sea salt and cracked black pepper - lots of cracked black pepper !

zest and juice of a lime.

Just heavenly

is quite strong in flavour, I am not really a bland foods person

last week I took it along to the restaurant to go on the salad ( dinner was lovely but I swear that was the best bit )
