: 3 lbs sweet potatoes cut into chunks
: 2T butter
: 2 T orange juice concentrate
: 1 1/2 tsp gr. Cinnamon
: 1/2 gr nutmeg
: 2 large eggs, slightly beaten

: topping
: 1 cup chopped pecans
: 2/3 cup rolled oats
: 4 T butter cut into bits
: Cook sw. potatoes in boiling water
: until soft, about 15 minutes. ( I
: sometimes bake my potatoes) Mash
: and whip potatoes, add remaining
: ingredients and whip till smooth.
: Spread mixture in 9 by 12 oiled
: pan. (I use round glass dish)
: Combine topping ingredients to form
: crumbly paste. Spread over top.
: Bake 45 minutes.
: I enjoy hot out of oven or cold.
: Whipped cream would be nice on
: top. I eat plain.
