Pickled ginger does look a bit like smoked salmon (although I've seen some that is very pale and not pinkish), but I don't think you could ever get salmon to taste like that. I'm with you - I enjoy it when I have sushi, but I think I might enjoy it too much if I had a jar of it in my house. Something about the zingy flavor of the ginger with just a little sweetness.
