I love using mixtures of flours. I never really cared for whole wheat flour in baked goods, because it's so heavy, so I started playing with other flours early on, and discovered a mix of brown rice and oat flour. I have also added in small amounts of almond or coconut flour. The program has been like that for me - give up one food and discover multiple other foods for every one I give up.
