We actually eat a lot of raw celery, plus our dogs love raw celery. If one of us gets the celery out, the dogs magically appear and sit there waiting for handouts. It's fun hearing them all crunching away. We also use celery to make broth from the bones of rotisserie chicken, in stir fry, and in green smoothies.
I haven't used leeks much at all, only if a recipe calls for them. Perhaps I will have to experiment. I like the idea of having some things prepared ahead, except our freezer is full to the brim. I think it's time to do an excavation and inventory!
