Re: Sometimes your plans just go wrong

That is a great solution, and we have a microwave at work so I wouldn't have to eat them cold. I don't think I've ever noticed small cans of refried beans at the market, but I haven't really looked, either. I used to eat refried beans with eggs for breakfast, but always bought a big can. This weekend I will go see what I can find at the store.

Sweet potatoes are sold in cans too, but I think those are usually sweetened, and I don't particularly like the texture either, from what I remember.

Now I am having thoughts of refried beans with cheese and avocado - obviously not the way I could serve them in an emergency at work, but a yummy thought. I could also cook up some lentils or very thick lentil soup and put a couple of containers of frozen lentils in the freezer at work.
