I need about the same amount of protein as you, a few grams less. I find the easiest way to get my protein with eggs is to have a 3 egg omelet with cheese, or you could do a scramble with two eggs, Canadian bacon and cheese. Then I would have whole grain toast or oatmeal for the complex carb.
I like to have protein shake for breakfast. The protein amount is easy to adjust without increasing the volume of the shake.
