yummy salad

Today when I got home from work, I found a bag of fresh salad greens from our neighbor's garden hanging on our gate. We are leaving on a trip tomorrow, so I wanted to make sure that we used as many of the greens as possible. I decided to make a salad for dinner.

I cut up some little potatoes, steamed them, and then tossed with oil and a mixture of Penzey's adobo and chili 3000 and roasted them in the oven. I cut up green beans and steamed them. I defrosted frozen boneless chicken thighs and cut them into bite sized pieces and sprinkled with garlic powder, then sautéed the pieces. I also cooked up a few slices of bacon. We each assembled our own salad. I added some avocado to mine. It was really yummy. There are leftovers so I can make a salad tomorrow for lunch, although I will have to prepare some additional protein. Maybe I will cook up some shrimp to mix with the leftover chicken.
