Tomorrow

Tomorrow my husband and I are going on a little road trip. We are going to a wildlife refuge to look at birds (and hopefully we will see some elk too). Options to go places are somewhat limited at the moment, but we will be birding from our car and won’t be in contact with other people.

In order to be safe and socially distanced, we are going to bring our lunch. We are making pork chile stew tonight. Tomorrow we will heat it up and put it into a thermos. It has pork, chicken broth, potato, sweet potato, carrots, green beans, onion, garlic, mushrooms and roasted green chile. I like to put Greek yogurt in mine to make it creamy and tame the spiciness a little. We will also bring celery and cucumber sticks and fruit, and some cheese and crisp breads in case we need a snack on the way home.
