Italian Eggs

I take 2 eggs and break them into a bowl and add 2 tbsp water to them blending well.

Then I add salt, pepper, a pinch crushed fennel (go easy as it is strong), crushed basil, a fresh mushroom, diced small, a couple of green olives, sliced, a green onion, diced, and shredded cheddar (I use Feta if I have it – really yummy).

Stir till everything is incorporated well.

Scramble in 2 tsp olive oil in a non-stick pan on medium heat. A great way to enjoy eggs!
