Teriyaki Chicken

2 lbs. of boneless, skinless chicken

½ cup fresh lemon juice (about 3 juicy lemons worth)

¼ cup water

3 Tbsp. soy sauce

¼ tsp. ground ginger

1 tsp. garlic powder (or fresh ginger and garlic if you prefer)

Combine all and marinate chicken several hours or overnight (a gallon Ziploc is ideal for this).

Preheat oven to 375°F (or heat BBQ grill).  Remove from sauce and bake uncovered for 1 hour or cook until done on grill.
