The natural type peanut butters, the ones that aren't homogenized and have oil on the top in the jar tend not to have added sugar, although in the early steps you don't have to worry about that.

If you buy that kind of peanut butter and turn the jar upside down for a couple of days before opening, it's easier to mix the oil in and you don't end up with really dry stuff in the bottom. You can also dump the whole jar into a bowl and mix it up with an electric mixer.
