I was standing on my porch facing the mountains this evening and realized that most of the leaves have fallen so now I can see *winter* mountain all across the Eastern sky. I have been taking the dogs out with me in the morning to keep them out of trouble. It is cool enough for them to wait in the car. They think it is exciting because sometimes I bring them tortillas from Garcia's.

On Saturday a group of people went out with me to celebrate a recovery birthday. It was really fun. I love that recovery includes learning how to do *friends* in a wonderful way. After breakfast, a few of us went over to the famous Java Joe's' and listened to some street performers playing music in the parking lot. Decaf lattes and good fellowship. And there was a puddle...something very unusual for Albuquerque. The kids were playing in it. The boys were jumping into the middle seeing how far they could get the splash to go. This just cracked me up. It was a nice morning.

**Radiant Ambassadors **

I attended the Obesity conference the other day. It's so fascinating to me that 'being overweight/obese' is still viewed by the medical profession (not to mention society at large) as the one and only health problem to address/tackle/battle with.

Anyway, I gave input at one of the workshops that perhaps 'weight' wasn't the best indicator of health as, just because someone was 'within the normal range for their height' it didn't mean that they were eating healthily. They could be restricting or eating once a day or living on packets of chips/crisps and then spending hours in the gym.

And I spoke with real people. People like me. People who may be interested in trying something different for either themselves or others. I handed out 4 cards and spoke with two more people about how Radiant Recovery had helped me. I also learned how online peer support was becoming the 'in thing' nowadays. Yet again, Radiant Recovery is leading the way!

I will probably never know what impact talking to professionals has made. But that's ok. At least 6 more people are now aware that there is another option available.

**How I Found Radiant Recovery **


My name is Rick and I learned about RR from a "chance" meeting with a Kaiser counselor -- my counselor wasn't available, so I met with this one, and after some discussion she recommended Potatoes not Prozac, which I bought for my Kindle that night.

No doubt about it I have been sugar sensitive my whole life.

I've lost 30 pounds several times in my adult life, but I always gain it back.

Reading PnP has given me real hope, since it explains so well the physiological root cause of my sugar-craving way of life (I'm 56).

I subsequently bought Your Last Diet and The Sugar Addicts Total Recovery Program book as well as signing up for the RR newsletter. I've started step 1 and now trying to get the "big picture" of how to develop all of the RR resources into a workable lifestyle. So, I'm really looking forward to this class! Thanks for offering it!

**Radiant Kitchen **


Thanksgiving Recipes

Butternut Squash Stuffed with Brown Rice, Pecans, and Turkey Sausage

Ingredients:

  • 1 small butternut squash
  • 1 cup cooked brown rice
  • 1 link turkey sausage (diced or sliced)
  • 1 TBS butter (divided)
  • 1 tsp maple flavoring (approximate)
  • 1/2 tsp cinnamon (divided)
  • 1/2 tsp nutmeg (divided)
  • sprinkling of chopped pecans (could use English walnuts)
Directions:

1. Preheat oven to 350 degrees fahrenheit.

2. Cut the squash in half and scoop out seeds and strings. Place skin side up in a pan with an inch of water in bottom.

3. Bake for 40 minutes or until tender.

4. When baked, remove from oven to a microwave-safe plate.

5. Put 1/2 TBS butter in cavity of squash along with a few drops of maple flavoring and half of the cinnamon and nutmeg. Put the cooked rice in next.

6. Top the rice with the rest of the butter, maple flavoring, spices, nuts, and the turkey sausage.

7. Warm in microwave for about 4 minutes on high or until rice is warmed through and butter is melted.

8. Sprinkle with a little freshly ground pepper and serve.

 

Slow Cooker Mashed Potatoes

Ingredients:

  • 5 pounds red potatoes, cut into chunks
  • 1 TBS minced garlic, or to taste
  • 3 cubes chicken bouillon
  • 1 (8 oz.) container sour cream
  • 1 (8 oz.) package cream cheese, softened
  • ½ cup butter
  • salt and pepper to taste

Directions:

1. Bring a large pot of salted water to a boil. 

2. Add potatoes, garlic and bouillon; cook until tender but still firm, about 15 minutes. 

3. Drain, reserving a little of the flavored water.  

4. Mash potatoes with sour cream and cream cheese, adding reserved flavored water, as needed to reach desired consistency. 

5, Transfer to a slow cooker and cook on low for 2 to 3 hours. 

6. Just before serving, stir in butter and season with salt and pepper to taste.

Serves 8.

Cranberry Chutney

Ingredients:

  • 4 Valencia oranges
  • Rind of one orange
  • 4 cups apple juice
  • 2 LB. Fresh cranberries
  • 1 1/2 cup walnuts
  • 1 tsp. Cinnamon
  • 1 pinch nutmeg

Directions:

1. Cut up the oranges, add the rind of one of them simmer in 4 cups apple juice for 15 minutes.

2. Add 2 lbs. fresh cranberries and 1 1/2 cup of walnuts.

3. Simmer for an additional 15 minutes until it thickens.

4. Add 1 tsp. cinnamon and a pinch of nutmeg.

Pumpkin Pecan Pie

Ingredients:

  • 1 cup canned pumpkin (not pumpkin pie filling
  • 1 cup evaporated milk
  • 1/2 cup Kathleen's Baking Mix
  • 1/3 cup apple juice concentrate
  • 1/2 tsp. maple flavoring
  • 1 TBS Butter, softened
  • 1 1/2 tsp. Pumpkin pie spice
  • 1 tsp. vanilla
  • 3 eggs lightly beaten
  • 3/4 cup chopped pecans

Topping:

  • 2 cups heavy cream
  • 1 1/2 tsp. vanilla
  • 1/2 tsp. Pumpkin pie spice

Directions:

1. Preheat oven to 350. Lightly coat a 9" pie pan with cooking spray.

2. Combine all ingredients except chopped pecans and topping and stir until well blended. Add chopped pecans and mix well. Pour into prepared pie pan.

3. Bake 35- 40 minutes or until knife inserted in center comes out clean. Cool completely before slicing. Serve with topping.

4. To prepare topping, beat heavy cream on high speed with an electric mixer until very thick and just beginning to peak. Add vanilla and pie spice and continue to beat until cream is stiff and holds a peak.

Kathleen's Baking Mix:

  • 3/4 cup oat flour
  • 3/4 cup rice flour
  • 1/2 tsp. salt
  • 2 tsp. non aluminum baking powder
  • 1/2 tsp. baking soda

Combine all ingredients. Makes 1 1/2 cup mix.

**Thanksgiving Means Gratitude **

I wanted to give you a special Thanksgiving edition. I thought I would do gratitude and joy. I think this article is my favorite one of all times...it seems like it is about Halloween, but it is really about joy...

This week is a special story. A number of us decided that we wanted to *convert* Halloween from a sugar orgy to a fun, fun party. We decided to have a costume party for the dogs and then take them trick or treating.

One of my friends adores my older Golden Retriever named Josie. She asked me if she could make Josie’s costume. I was thrilled. She lives in Boulder so I was given measuring instructions. Neck to tail, girth, space between eyes, space around neck, wrist size, distance across chest. I got regular updates and pictures of the process.

The unicorn would have a bonnet with a horn and little ears. The hooves would be little bi-colored booties, the bonnet would have a fabulous mane to match a removable tail. The material was specially chosen. And then the artistry began. It was so much fun to hear how it was progressing.

In the middle of the process, I heard that our local boutique dog store was sponsoring a costume contest. I just knew Josie would win. She would be the princess of Albuquerque because I knew she would have such a stunning costume.

The costume arrived, carefully packed with tissue and a toilet paper roll around the horn. On Saturday, we were set to get dressed. Josie actually liked it. We had to do a little personalization with safety pins. But we got the hooves in place, got the coats attached, the tail velcroed, and the cap in place. Then she leapt on the bed and rolled. The costume survived.

Off we went to the contest. There was mighty competition. I felt smug since *those* costumes were bought and of course Josie was decked in a handmade glory. We were number 24. When I took her down the runway, she pranced and when everyone clapped, she almost took a bow.

But she did not win. Peter pan and Tinkerbell won. But I want you to see how Josie felt about that. Here she is, with her costume slightly askew. This is radiance. There is nothing more than this smile, this joy in BEING. May we all be taught by smiles like this.
