Sometimes I do cheese toasties: put cheese on bread, with ham or anchovies or whatever and put under grill for 5 mins. In the meantime make salad.

Tuna/Avocado Spread


For lunch today I had a can of tuna and an avocado mashed up with a fork, and added some lemon juice. I put that on top of some ryvitas (Swedish rye crisp bread, but any bread would be fine! Had sliced tomatoes and cabbage on the side.)

Aliza's Fast Meals


  • Wholegrain bread, spread with pesto, then topped with sliced tomato and mozzarella cheese. Bake or broil.

  • Scramble two eggs and stir in some chevre and chopped green onions just before the eggs have totally set.

  • Cut up tomatoes, green onions and cucumber and mix with cottage cheese and ground fresh pepper.

  • Split a whole wheat pita and do an openfaced sandwich on it. I put sliced salad onions and green peppers on the thin slices of pita, then cheese, and I bake or broil it.

  • Dress leftover steamed veggies with salad dressing, and add some canned beans.

  • Heat a can of black beans, adding some ground cumin, squeezed garlic and some hot red pepper flakes. Mash the beans until thickened and like a lumpy refried beans dish. Top with cheese, slide into the oven. Meanwhile, either heat some cooked rice or get out some whole wheat tortillas, or corn chips if you can eat them. Chop some dark green lettuce, tomatoes, and salad onion. Make haystacks or burritos, or just eat it all with rice in any configuration you like. You can add salsa and sour cream or plain yogurt, too. This is the meal my son and I eat most frequently together on the nights when his father is working late and doesn't have dinner with us.

Allison's Fast Meals


  • Tuna salad with dill, salmon salad with Patak's garlic relish, or egg salad with curry powder on ryvita or WASA or Ezekiel bread, with cut up celery, carrots and cucumbers on the side.

  • Today, for lunch, I'm having tuna salad on ryvita, half a can of Progresso hearty black bean soup, and a salad made of a little of this and a little of that - basically just cut up what I had in the fridge and put some dressing on it.

    I do use a few canned soups, to supplement protein, and for cold days when I just want something warm (and it's cold and damp here today - I worked out just to get warm!

Karla's Tuna


Get your self some canned black beans (the carribean are my favorite), smash about 2 to 4 tablespoons full with a fork in your bowl add a can of tuna and some mayo, mix well. I got that from a Nigerian friend. I usually eat it alone but that would be excellent with some crackers.

Kathy's Fast Meals


Let's see - for today's lunch I cooked up brown rice in homemade chicken broth and will use that as my base for lunches through the week.

Today I chopped up cabbage, green pepper (habenero I am one tough woman!), carrots, green onions and added some peas. Cottage cheese for protein and a little oil and vinegar. Added some of those grape tomatoes - but I have to be careful, too many... I can eat them like candy.

Other days I will stir fry some brussel sprouts, onions and peppers. Any left over meat (chicken or beef) for protein. Sprinkle on sesame seeds or slivered almonds.

The basic 'formula' is brown rice, raw or stir fried veggies and protein.

Linda's Quick Tomato


Core a large tomato. Cut into a blossom. Fill with cottage cheese or tuna salad or chicken salad, whichever you have on hand.

Place baby carrots and green pepper slices around the tomato. Add a few Triscuits.

Grab your bottle of water and enjoy.

It's quick, easy, and appealing.

Patty's Roasted Peppers


I LOVE roasted red peppers (I roast them myself). I do several pounds at a time and have them ready. I wash and dry the whole peppers, lightly wipe each one down with olive oil, put them in a baking pan with lots of fresh garlic cloves and bake at 300-350 for as long as it takes for the skin to start to blister. Then I turn them over and let the skin blister on the other side.

Take them out, let them cool, skin and seed them, preserving any of the juice as I go. Put them in a container with the roasted garlic cloves and mix in some Vegesal - YUM!) I mash the roasted garlic on each of 2 slices of Ezekiel toast, put a generous serving of red peppers on the toast, top with mozzarella and broil or microwave until the cheese melts. YUM!

Sheba's Quick Recipes


  • I have a favorite that i use for a quick breakfast. I take a couple of brown rice cakes and top each one with a tbsp of natural peanut butter and a sliced strawberry (when in season) or a couple of slices of banana. Add a couple of hard-boiled eggs or string cheeses and presto an on-the-go breakfast. The good thing is that I can prepare it the night before, put in a brown bag, stow in the fridge and then grab-n-go the next morning.

  • I also like taking a couple of slices of Ezekial bread, spraying one side of each slice with olive oil and then putting a slice of Provalone or Cheddar in between. Sometimes for a change I put a little yellow mustard on a slice and then the cheese or add some super thinly sliced onion to the cheese. Who doesn't like the old stand by of grilled cheese? Add a few veggies or some veggie soup or chili and viola - a yummy, easy lunch.

Chicken Wraps


I made a yummy lunch today. I had some left over chicken breasts (I usually grill 3 at a time on my indoor grill) that I had seasoned with salt, pepper, chili, onion and garlic powder and some soul food seasonings too. I sliced the chicken breast up and nuked it to warm it up a bit. I then took 2 whole wheat tortillas and spread each one with around a tbsp of cream cheese, piled on a romaine lettuce mix, and then topped with the warmed chicken pieces. Voila, I had a couple of 'wraps'. Very tasty and I fixed some brussel sprouts to go with them. Finished it off with 1/2 apple with a bit of Swiss cheese for dessert. Quite good.

Mackeral Quick Wraps


Ingredients:
  • 2 WW tortillas
  • romaine salad mix
  • fresh tomato
  • 1 slice Swiss cheese
  • tinned Mackerel
  • lemon herb salad dressing (sugarless)
Directions:

I fixed a couple of 'wraps' using the above ingredients. I also had some baby carrots, raw zucchini, and the rest of the tomato on the side with the wraps. Quick and delish.

Tofu Pizza


I pour canned pizza sauce (it seems to be thicker that spaghetti sauce and no sugar) on top of a slab of tofu and then put Mozzarella cheese on that and stick it in the toaster oven (or regular oven or micro..whatever you have) til it's heated through and the cheese melts. Quickie salad on the side and whatever brown you can scrounge up and it's a whole meal.

Variations are as many as what you find in the fridge. I like to add leftover cooked veggies like broccoli or eggplant. Also chicken pieces work good if you don't like tofu.

It's kind of gloppy when you scoop it out; but it has that great pizza smell and taste that I never get tired of.

Eggs and Spinach


Steam about 10 ounces of chopped spinach and drain. Spray a small microwavable container with oil. Drop in two eggs. Microwave for two minutes. Push the eggs through a sieve over the spinach, adding whatever seasoning you like. Delicious!

Eggs and Tomato


I never used to like eggs until I started cooking them this way:

I cut up a whole tomato and saute it in some olive oil until it gets soft and the skin starts to separate. (I take out most of the seeds while cutting it up.) When the tomato has begun to cook, I drop in a couple eggs and a whole chopped scallion. Then I sprinkle in just a little feta or shredded Monterey Jack cheese. The cheese softens up nicely in a few seconds. I eat this while it's still fairly runny, with salt and fresh-ground pepper.

Salsa Scramble


Saute any vegetables desired in non stick spray or olive oil in a pan. Break some eggs into a bowl and scramble with a fork. Pour in some salsa and mix well. Cook the scrambled eggs with the sauteed vegetables. Delicious on top of a veggie burger, or wrapped in a whole wheat tortilla.

Lunchbox Beets


Take 1 can of sliced beets. Open and drain the juice. Transfer beets to another container. I like using a glass jar with a wide mouth.

Pour in 1/4 cup to 1/3 cup vinegar - depending upon how sour you like things. I used cider vinegar because I like the taste. Add about 1/2 tsp of salt - again vary this amount to your salty taste requirements.

Put the lid on and shake to mix.

I mix this up in the morning when I am packing my PNP lunch. By lunchtime, the beets are "pickly" and salty. Nice little vegetable dish without peeling, cooking, etc.

Pretty good (but you gotta like beets)...this is so simple, it's laughable - I am tempted to call this "Laughable Beets" but since I am always looking for easy things for my lunchbox, hence the name.

Tuna and Veggies


Mix together:
  • finely chopped cauliflower, broccoli, summer squash, zucchini, onion and cucumber
  • 1 can tuna
  • mayo (I use cold pressed canola mayonnaise)
  • salsa (my health food store has some home made stuff that is fantastic) I usually eat it with Rye wasa crackers or whole wheat bread.

    Allison's Lunches


    I have four basic lunches (I have access to a microwave at work):
    • brown rice, greens (frozen collard or turnip greens, or spinach, thawed) and meat loaf
    • brown rice, frozen thawed greens, and baked tofu, cut into cubes
    Both those get heated up in the microwave.

    • a big salad with raw zucchini and summer squash and lots of other veggies, and canned salmon
    • a big salad with raw broccoli, cauliflower, bok choy, other veggies, and tuna
    I add cooked brown rice pasta to my salads as a brown.

    Bachelor Casserole


    Ingredients:

    • leftover chicken
    • steamed broccoli, carrots, and other veggies (I've tried
    • spinach, cauliflower, whatever)
    • brown rice
    Directions:

    Combine chicken and steamed veggies in a skillet with some olive oil. Stir in brown rice. Top with grated cheese and put a cover on the skillet until it melts. Serve.

    Rice with Salsa and Beans


    Boil 2 C water.

    Add 2 C Minute brown rice, 1 can drained black beans and 1 C salsa.

    Cover and simmer for 5 minutes.

    Baked Apples


    I chunked up the apples, skin and all into a buttered baking pan. (Whatever size for however many apples you have.) Then I poured in a little bit of cider (I live in Michigan and it's apple season big time now) and sprinkled a little salt, a little vanilla, a little more cinnamon, drizzled some butterscotch flavoring on, sprinkled on some chopped pecans I had in the freezer and put a few pats of butter on the top. I baked it at 375 degrees fahrenehit for about a half-hour, but time would vary according to your apples; variety and size of chunks. Just watch it and determine how soft you want the fruit.

    I poured a little oat milk on mine when I ate it....YUM!

    Apple Sauce


    Chop up a whole bunch of apples, leaving the skin on. Cook over low heat, stirring occasionally, until they become sauce. Add pumpkin pie spice. Yum! It's like apple pie.

    Squash "Dessert"


    Here's an idea for the holidays, for getting through dessert time. Cook up a buttercup or acorn squash. Add pumpkin pie spice and a little butter, and you have a PnP friendly dessert. You could even pour a little cream on to make it squash "a la mode" I find that squash tastes like a dessert to me now. And squash is very good for you, lots of vitamins..
