Re: Breakfast is hard!!!

Amy,

Here is a really quick hot breakfast which I picked up from this forum a few years ago. It is fast, filling and very comforting.

Ingredients
1/2 cup rolled oats
1 egg
1/2 cup cottage cheese

Directions
The night before, I put the 1/2 cup rolled oats into a microwaveable bowl with about 1/2 cup of water -- plus a tiny bit more. I cover the bowl and leave it on the counter out of the way.
In the morning, I add one raw egg to the oats and stir it up; then I add 1/2 cup of sugar-free cottage cheese and stir it up again. Put it in the microwave uncovered for about 6 minutes on high. Since I have an older microwave, I cook it for 3 minutes, stir it and turn the bowl and then cook for 3 more minutes.
When I take it out, I add a small amount of salt and Half and Half or milk.
I usually add a small shake or some turkey bacon to my breakfast to round out my protein requirement. It holds me all morning!
