Dori,
Amaranth has a very different flavor to me. It can be a bit strong tasting, so what you add to it can be important. The grain maintains its little shape after cooking, but is a very, um...gummy or porridge-y consistency. I use it for breakfast, and add my precooked chicken and herbs / spices. I have also used it in soups as a kind of thickener.
I had a book that gave instructions on how to pop it, which was fun to do with my girls...but we ended up burning quite a few of them, so it didn't taste very good. I also had a recipe for waffles, and I really like the way it crisped up. I don't think I've ever tried putting seaweed in it, so it is possible to make it and it eat without the seaweed!
