You definitely do not need to put seaweed in it.
I looked it up online, and it says to bring 2.5 cups of water to a boil and then add 1 cup of amaranth and simmer for about 20 minutes. For porrige, use 3 cups of water (which is what I remember from cooking it, but I haven't made it in a while) and simmer for about 25 minutes.
