I have shake for breakfast, so sometimes I have an omelette for one of my other meals, either lunch when we eat out on weekends, or for dinner at home during the week. I usually saute some mushrooms and a handful of baby spinach, kale and chard and then add some Canadian bacon as well. It's yummy.
